Default Gauges Flickering

I have a 2000 Econoline E150. Sometimes when I start it the gauges do not work at all (fuel, speedo, temp, etc), but if I shut it off and turn it back on they start to work.

Now while driving they flickered (speedo went from 65 to 70 then back to 65) - and my temp gauge went into the red and the temp warning light came on, then after a few minutes, it flickered again and temp light went out and gauge went to normal. We pulled over and the coolant was fine and it was not overheating. We drove another 80 miles and it did not overheat, so I am pretty certain it is a gauge issue.

Any suggestion on how to fix or diagnose this?
