Exclamation 02 Focus Temp Gauge Jumps to Red, Not Overheating

Hi, i just bought an 2002 Ford Focus ZTS manual transmission, 82,000 miles. I don't know much about cars but my dad does and we are both confused by this issue.

When i am driving the car the temperature gauge goes into the red very, very fast but it will go back down to normal very, very fast as well. i've read of people having this problem with idling but it does while driving. The oil/coolant/ect. are all topped off, there are no spots of leaks on the driveway (i park in the same place everyday)

Although i don't know cars, but i know chemistry and the engine and engine bay has too high of heat capacity to overheat and cool down that rapidly so i'm pretty sure that the car, is not, in fact, over heating. There is also no smoke, steam, ect.

We have had a car whose head gasket had blown and i'm confident that it does not have that, that is not what is going on.

I'm driving down from Connecticut to Virginia soon so i need to know what is going on and how much the repair will be.
