Default Doughnut Gaskets

I have a 1998 Taurus 24v DOHC and I had to remove the catalytic converter Y-pipe.I did not see any doughnut gaskets on the pipes going to the manifold.I thought all cars would have these gaskets I'm not the original owner but my father in law is and he did not have that kind of work done to it.Did these sables come like that?Also at the end of the catalytic converter going to the flex pipe or resonator I will need a new metal gaskets but not sure what this is called? Thanks
